06 - 2 slices crusty bread, toasted

# Directions:
01 - Heat olive oil in a nonstick skillet over medium heat until shimmering, approximately 1 minute.
02 - Sprinkle crumbled feta evenly into two small nests in the pan, each approximately the size of a fried egg.
03 - Allow feta to sizzle for 1 to 2 minutes until it begins to brown and crisp at the edges.
04 - Gently crack one egg into the center of each feta nest.
05 - Cover the pan and cook for 3 to 4 minutes until egg whites are set but yolks remain runny. Cook 1 to 2 minutes longer for firmer yolks.
06 - Season with black pepper and red pepper flakes if desired.
07 - Transfer immediately to toasted bread and garnish with fresh herbs if desired.
